Pakistani Pakoras

Pakoras are very important part of the Iftar menu, iftar looks incomplete without Pakoras. There are too much recipes to get ready pakoras. I am sharing the basic recipe of the pakoras, here we go: http://blush.com.pk/category/food/
Ingredients
Oil
Potato
Basin
Onion
Red chili powder
Green chilies
Garlic paste
Ginger
Baking soda
Turmeric powder
Salt to taste

Instructions
1.      Slice the onions into fine pieces. Peel potatoes and grate them.
2.      Add sliced onion and grated potato in a mixing bowl, and add besan/gram flour, chopped green chili, ginger and garlic paste, red chili powder, cumin seed powder, turmeric powder, baking powder and salt in the bowl. Mix them and add salt to taste.
3.      Heat oil in a fry pan on medium flame.
4.      After 5 minutes you have to check the temperature of the oil by dropping a spoon of the mixture.
5.      Now gently mix the mixture again and drop the mixture in the batches into the oil.
6.      Flame should be low or medium and remember that you have to deep fry the mixture until they become crispy and golden in color.
7.      Now remove them from oil and place on tissues, so extra oil will be absorbed.
8.      Pakoras are ready, now you can serve pakoras with the chutney.
